- 8 large thoroughly washed russet potatoes (red potatoes are delish too)
- 1/3C shortening
- 12 oz. center cut bacon
- 8 pieces smoked turkey bacon
- 8 pieces honey smoked turkey (sliced deli meat)
- 4 scallions (green onions)
- 6 cloves garlic
- 1 tsp olive oil
- 1/4 bell pepper
- 1tsp black pepper
Dairy
- 1 cube (1/2C) butter
- 4 oz. cream cheese
- 8 oz. sour cream
- 1/2C milk
Instructions:
Pre-heat oven to 450 degrees Fahrenheit. After potatoes are thoroughly washed,poke holes in potatoes with fork. Coat potatoes with shortening until well covered. Place on a cookie sheet and cook 1 hour, making sure to flip potatoes over 3/4 of the way through cooking time. While potatoes are cooking, fry center cut bacon and turkey bacon until medium crispy (not soft and not brittle). Pat dry grease off bacon and chop pieces. Fry honey smoked turkey until caramelized, let cool and chop into small pieces. Chop scallions (green onions) and set aside dark green top. Saute in olive oil scallions (minus green tops), chopped garlic cloves, and 1/4 bell pepper until caramelized. In a blender cream all dairy and then add all remaining ingredients while potatoes are hot. Serve immediately. ***For twice baked potatoes, remove potatoes from skin and follow instructions. Then place inside skins, top with cheese and re-cook until cheese melts.
